Peach Ricotta Toast

When you need a quick, tasty breakfast or mid-day snack, it’s ricotta toast to the rescue. This simple recipe provides ample nutrients, including high-fiber carbohydrates from whole-grain toast and fresh sliced peaches, protein from ricotta cheese, and healthy fats from a sprinkling of chopped pistachios. It satisfies your craving for sweet, salty, creamy, and crunchy and takes just minutes to prepare.

Ingredients

  • 2 slices of bakery-style, thick-sliced whole-grain bread
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon lemon zest from a medium lemon
  • 2 teaspoons honey (plus extra to drizzle over the top if desired)
  • 1 ripe peach
  • 1 tablespoon salted, shelled pistachios
  • 2 fresh basil leaves

Tools

  • Toaster
  • Microplane, cheese grater, or vegetable peeler
  • Measuring cup and spoons
  • Chef’s knife and cutting board

Instructions

1. Toast the bread in a toaster.

2. While the bread toasts, zest the lemon. Using a microplane or the side of a cheese grater with very small holes, rub the lemon skin over the tool to remove the yellow zest. Stop and reposition the lemon once you reach the bitter white pith. You can also use a vegetable peeler to remove thin strips of lemon peel, then finely mince them with a chef’s knife.

3. Combine the ricotta cheese, lemon zest, and 2 teaspoons of honey in a small bowl. Mix well and set this aside.

4. Cut the peach into thin slices. Roughly chop the pistachios and thinly slice the basil leaves.

5. Spread half of the ricotta mixture over each slice of toast. Top each slice with half of the peaches, chopped pistachios, and sliced basil.

6. If desired, drizzle extra honey over the ricotta toast before serving.

  • Measure and mix the ricotta, lemon, and honey.
  • Spread the ricotta on the toast.
  • Layer the peaches, then sprinkle with pistachios.
