Pumpkin Bars


Pumpkin Bars


Makes 24 bars


Ingredients:

  • 1¼ cups whole wheat flour
  • 1 cup pumpkin puree, canned
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon nutmeg
  • ½ cup buttermilk
  • ¼ cup canola oil
  • 2 teaspoons vanilla extract
  • 1 egg, plus 1 egg white
  • Non-fat cooking spray


Equipment:

  • 13x9-inch baking pan
  • Mixing bowl
  • Electric mixer


Directions:

Preheat oven to 375 degrees F.

Spray a 13x9-inch baking pan with non-fat cooking spray.

Add all dry ingredients to a bowl and mix until combined. Use a stand or hand-held electric mixer for best results.

Add the remaining wet ingredients and mix until thoroughly combined.

Pour into baking pan.

Bake 30-40 minutes, until a toothpick inserted in the center comes out clean.

Cool on a wire rack and cut into 24 bars.
