Poached Cod with Lemon Sauce
Serves 4
Ingredients:
For the fish:
- 4 cups water
- 1 bay leaf
- 1 scallion, chopped
- 2 parsley sprigs
- ½ teaspoon salt
- 1 pound cod fillets
For the sauce:
- 2 scallions, thinly sliced
- ¼ cup fresh parsley leaves, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon lemon zest
- ¼ cup fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- Black pepper, to taste
Equipment:
- Large saute pan
- Slotted spoon
- Blender
Directions:
Fill the saute pan with just enough water to cover the cod, about 1 ½ inches.
Add bay leaf, scallion, parsley, and salt to pan. Bring to a boil.
Carefully place the fish into boiling water. Reduce the heat to low, and simmer for 7-9 minutes, until the fish is opaque and firm to the touch.
Remove the fish and place on a plate.
Place ¼ cup of the poaching liquid in a blender, discard the remaining liquid.
Add scallions, parsley, thyme, lemon zest, lemon juice, and pepper. Turn blender on low and slowly add olive oil. Continue blending until combined.
Spoon sauce over the fish and serve.
