Apple Oatmeal Pancakes
Serves 4
Two 3-inch pancakes per serving
Ingredients:
- ½ cup oatmeal
- 1/3 cup whole wheat flour
- ½ tablespoon, plus ½ teaspoon baking powder
- ½ tablespoon sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1/3 cup unsweetened applesauce
- 1 egg white
- ½ cup skim milk
- 1 tablespoon canola oil
- ½ teaspoon vanilla extract
- non-fat cooking spray
Equipment:
- 1 large bowl
- 1 small bowl
- Skillet or griddle
Directions:
Add oatmeal, flour, baking powder, sugar, cinnamon, and nutmeg in a large bowl. Mix well and set aside.
Combine applesauce, egg white, skim milk, canola oil, and vanilla in a small bowl; whisk until blended.
Add the wet ingredients to the dry mixture and combine until moistened. The batter should be a little lumpy. Let stand for 5 minutes.
Preheat skillet or griddle to medium and spray with non-fat cooking spray.
Drop 2 tablespoons per pancake onto hot griddle.
Flip when the top starts to bubble and the bottoms are lightly browned.
Cook until both sides are golden brown.
